Asian Style Noodles

Ingredients:

1 packet egg noodles
1 bag coriander
1\2 tsp ginger grated
50ml soya sauce
Baby corn
Red pepper
Mange tout
1 COLCOM Pork Fillet cut into strips

Method:

Cook the egg noodles in boiling salty water.
Fry off the pork in vegetable oil, add the vegetables and fry till cooked.
Add the ginger and the soya sauce. Fry a little longer.
Add the coriander leaves.
Mix together with the noodles and serve warm or cold.

Easy Greek Chicken Casserole

Ingredients:
15 ml SPAR olive oil
1 onion, chopped
10 ml dried thyme
1 ml freshly ground black pepper
6 garlic cloves ,crushed
3 large potatoes, peeled and cubed
250 ml fresh green beans, sliced (160g)
410 g can SPAR diced tomato
8 skinned chicken thighs
100 g pouch black olives
100 g SPAR Feta cheese, crumbled
Method:
1. Preheat oven to 200 ºC.
2. Gently saute the onion in the heated olive oil. Add thyme, pepper and garlic, and cook briefly.
3. Add in the potato cubes and toss over medium heat until they begin to brown.
4. Add in the green beans and tomato, and transfer this mixture into a large shallow oven dish.
5. Nestle the chicken pieces in amongst this, cover and bake for 45 minutes.
6. Add the olives and sprinkle over the cheese. Bake uncovered for a further 5 minutes.

Beef, Pancetta and Mushroom Kebabs

Ingredients (serves 4)

  • 350g beef rump steak, trimmed, cut into 2.5cm pieces

  • 8 button mushrooms, halved

  • 1 small zucchini, halved, cut into 2cm pieces

  • 4 slices pancetta, halved

  • Olive oil cooking spray

  • Lemon wedges, to serve

Method:

  1. Pre-soak skewers in water for 10 minutes

  2. Thread beef, mushrooms, zucchini and pancetta onto skewers.

  3. Spray a barbecue plate or chargrill with oil. Heat over medium-high heat. Cook skewers for 3 to 4 minutes each side for medium or until cooked to your liking. Serve with Greek salad and lemon wedges.

Coriander-Chilli Chicken Meatballs

Ingredients (Serves: 8)

1kg chicken mince

125g dried breadcrumbs

4 spring onions, finely sliced

1 tablespoon ground coriander

handful fresh coriander

4 tablespoons sweet chilli sauce

2 tablespoons fresh lemon juice

oil for pan frying

Method:

1. In a large bowl, mix together the chicken and breadcrumbs. Season with spring onion, ground coriander, fresh coriander, chilli sauce and lemon juice; mix well.

2. Using damp hands, form mixture into evenly shaped balls that are either small enough to eat with your fingers, or large enough to use as burgers.

3. Heat oil in a large frying pan over medium heat. Pan fry the chicken balls in batches until well browned all over.

Buttered Prawns with Tomatoes & Olives

Ingredients:
4 plum tomatoes, peeled and deseeded, cut into 4-6 wedges
500g Breco prawn meat
50g unsakted butter, softened
1/2 teaspoon dried chilli flakes
50g Kalamata olives, pips removed, sliced
20ml white wine
3 cloves garlic, thinly sliced
2 tblsp parsley, finely chopped
Method
1. Place a large frying pan over high heat. When hot, add 1 tablespoon of butter and the prawns, and saute for 2 minutes, shaking the pan until the prawne become opaque but are not yet cooked.
2. Add the tomatoes, chilli and olives to the pan. Cook for another 2 minutes. The prawns should be just cooked.
3. Add the white wine, and simmer for 1 minute. Add the remaining butter, garlic and parsley. Stir until the butter is incorporated. the sauce will still be a bit runny.
4. Serve immediately with bread to mop up the delicious sauce.
